We are 3rd generation restaurateurs on our paternal side. The Original Volcano Restaurant, a legendary landmark in Troy, was our grandfather's. The maternal side of the family ran their household like a restaurant. Our mother was one of 22 children! Our mother's teaching is still an instrumental part of our kitchen, where pasta making is a daily routine. Even our manicotti, lasagna and ravioli are created from scratch, an almost unheard of practice today. This is knowledge that cannot be taught, only practiced in our culinary tradition.
Our family history and pride in what we do is what drives us to serve you with the best cuisine we can create. The cost of any ingredient will never stop us from using it. Compromising on quality is not a part of our makeup. Our goal is to serve you the best way we know how, combined with the stubborn desire to stick to old-fashioned techniques.

which opened in Troy, NY in 1908 ... and ran for another 70 years!
